Ravioli with Spinach and Creamy Parmesan

Ingredients

  • Spinach - 3.5 oz
  • Butter - 1 teaspoon
  • Ricotta cheese - 1.8 oz
  • Parmesan Cheese - 2.6 oz
  • Garlic - 1 clove
  • Nutmeg - a pinch
  • Spring roll wrappers - 24 pieces
  • Chicken Egg - 1 piece
  • Cream - 4.2 oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

In a large pot, bring salted water to a boil. In another pot, place the spinach, butter, and spices. Cook the spinach, remove it, dry it, and chop finely. Transfer to a suitable bowl.

Step 2

Add the ricotta, grated parmesan, finely chopped garlic, and crushed nutmeg. Lay out the wonton wrappers, brush the edges with egg yolk. Place the spinach mixture on the dough and seal the ravioli (12 pieces).

Step 3

To prepare the sauce, pour the cream into a small pot and simmer for a few minutes until it thickens. Add 50 grams of grated parmesan, wait for the cheese to melt, and remove from heat. Keep warm.

Step 4

Drop the ravioli into a large pot of boiling salted water and cook for 1–2 minutes until they float. Arrange the cooked ravioli on serving plates and drizzle with the sauce.
