Ingredients

  • Semolina Flour - 3.5 oz
  • Wheat Flour - 3.5 oz
  • Egg Yolk - 3.5 oz
  • Spinach - 7.1 oz
  • Ricotta cheese - 3.5 oz
  • Parmesan Cheese - 0.7 oz
  • Salt - to taste
  • Sage - 1 sprig
  • Ground Black Pepper - to taste
  • Nutmeg - to taste

Step by Step guide

Step 1

Prepare the dough. Mix the two types of flour and the yolk, then refrigerate for two hours. Roll out thin dough and cut into circles.

Step 2

Blanch the spinach in boiling water, then drain and place in cold water.

Step 3

Mix the spinach with ricotta, then add the filling to the ravioli.
