Ingredients
- Sweet Red Onion - 1 piece
- Parsley - 0.7 oz
- Dill - 0.7 oz
- Canned Corn - 1 can
- Canned Baby Beets - 1 can
- Garlic - 1 clove
- Meyer Lemon Juice - 1 tablespoon
- Mayonnaise - 4 tablespoons
- Croutons - 1.8 oz
- Ground Black Pepper - to taste
- Salt - to taste
- Sweet Pepper - 1 piece
Step by Step guide
Step 1
Wash the sweet pepper, dry it with a paper towel, cut it in half, and remove the stem and seeds. Cut the flesh into wide strips.
Step 2
Peel the onion and slice it into half-rings. Sort the herbs, set aside a few sprigs for garnish, wash the rest under cold running water, dry with a paper towel, and then finely chop.
Step 3
Drain the beans and corn separately in a sieve and let the liquid drain.
Step 4
For the dressing, peel the garlic and press it through a garlic press. Mix with lemon juice and mayonnaise.
Step 5
In a bowl, combine the sweet pepper, onion, chopped herbs, beans, and corn, and gently mix. Season with pepper and salt to taste. Drizzle with the dressing, sprinkle with croutons, and garnish with the reserved herb sprigs.
