Ingredients
- Red Currant - 2 lbs
- Potato - 3.5 oz
- Chicken Broth - 5 fl oz
- Dry White Wine - 1 fl oz
- Butter - 1.1 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Shred the cabbage.
Step 3
Peel and julienne the potato.
Step 4
In a skillet, melt 20 grams of butter and sauté the cabbage and potato for 7–10 minutes.
Step 5
Pour the broth and wine into the skillet and bring to a boil.
Step 6
Simmer until the vegetables are completely soft.
Step 7
Add salt and pepper to taste.
Step 8
Pass the vegetables through a sieve.
Step 9
Stir in the remaining butter into the purée.
Step 10
Serve the red cabbage purée with smoked sausages.
