Ingredients
- Duck - 14.1 oz
- Red Currant - 1 piece
- Bacon - 3.5 oz
- Breadcrumbs - 3.5 oz
- Red Wine Vinegar - 1 fl oz
- Butter - 1.8 oz
- Sugar - 1.8 oz
- 20% Sour Cream - 3.5 oz
- Spanish onions - 1 head
- Dijon Mustard - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place four large but not too thick cabbage leaves in a pot of boiling salted water and cook for ten minutes.
Step 2
Finely shred about half a kilogram of cabbage and sauté it together with onions in butter, stirring constantly, for about fifteen minutes. Add sugar, salt, and vinegar, mix well, and continue to simmer for another five to seven minutes.
Step 3
Finely chop the bacon and duck meat (this can include breast, legs, and any scraps) and mix them with the stewed cabbage. Cook for another ten minutes, then combine with the bread crumbs.
Step 4
Place the prepared filling onto a cabbage leaf, which is folded after boiling into a boat shape. Cover it with a second cabbage leaf, place it on a baking tray, and put it in an oven preheated to 320°F for forty minutes.
Step 5
Serve with sour cream mixed with Dijon mustard.
