Description

Remove the outer leaves of the cabbage. Separate the heads into individual leaves and cut off the stems. Thinly slice the leaves, rinse them in cold water, and dry them well.

Bring salted water to a boil in a large pot, add the cabbage, pressing it down with a spoon so that it is completely submerged. Cook for 5 minutes, then transfer to a colander, let it drain well, and cool slightly.

Meanwhile, whisk together the vinegar and oil, season with salt and pepper. Place the cabbage in a salad bowl, drizzle with the vinegar mixture, and toss gently. Serve warm or cold.
