Clean and rinse the head of red cabbage, cut it into quarters, remove the core, and finely shred it with a sharp knife or a mandoline.

Then place the cabbage in a pot, pour boiling water over it, cover with a lid, let it sit for 20–30 minutes, then drain in a colander; after that, rinse with cold water, squeeze out excess water, place in a salad bowl, pour with vinegar, add salt, add sugar, mix, and let sit for 20–30 minutes. You can also add a tablespoon of vegetable oil to the cabbage.

For this salad, you can skip the boiling water step and instead sprinkle the cabbage with salt and massage it by hand until it becomes soft and starts to release dark juice; then squeeze it out and pour with vinegar, add sugar, and mix. After a few minutes, the cabbage will take on a vibrant color.
