Description
Two tablespoons of curry shouldn't make this dish too spicy. But if you find it isn't spicy enough, keep some coconut milk handy to add directly to your bowl.

- Pork Skewers - 2 lbs
- Potato - 2 lbs
- Tofu - 7.1 oz
- Chicken Broth - 2 qt
- Lemon - 2 pieces
- Onion - 1 head
- Coconut Milk - 7 fl oz
- Garlic - 6 cloves
- Ginger - 0.7 oz
- Cilantro - 1.8 oz
- Soy Sauce - 1 fl oz
- Red Curry Powder - 2 spoons
- Sugar - 1.8 oz
- Vegetable Oil - 1 fl oz
Step by Step guide
Step 1
In a deep skillet, sauté finely chopped onion with curry paste in vegetable oil over high heat until soft. Add finely chopped ginger and continue to cook, stirring, for another minute.
Step 2
Sear the pork ribs, cut into individual pieces, along with the onion, paste, and ginger until browned. Add the diced potatoes, making sure to peel them first. Cook for five minutes, stirring constantly. Add the garlic and mix well. Cook for another thirty seconds. Then, pour in the broth and simmer on low heat for twenty minutes.
Step 3
Then pour in the soy sauce, add the sugar, and stir in the coconut milk. Cook for another five minutes. Squeeze in the juice of two lemons, add the coarsely chopped cilantro, and the diced tofu. Gently mix to avoid breaking the tofu cubes, wait for the curry to start bubbling again, and then remove from heat.
