Ingredients
- Lentils - 1 cup
- Tomatoes - 5 pieces
- Spanish onions - 1 head
- Meyer Lemon Juice - 2 tablespoons
- Olive Oil - 2 tablespoons
- Water - 1 qt
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Garlic - 4 cloves
Step by Step guide
Step 1
Chop the onion into small cubes and sauté in olive oil in a heavy-bottomed pot. The onion should become soft, do not brown it.
Step 2
Add the lentils and sauté together with the onion for a couple of minutes.
Step 3
Pour in the water and cook for about 20 minutes until the lentils are soft (this is sufficient for red lentils).
Step 4
Dice the tomatoes into small cubes (the riper, the better). Chop the garlic into small pieces (I prefer chopping over crushing). Add them to the lentils when they are soft, season with salt and pepper.
Step 5
Bring the soup to a boil, let it simmer for 2 minutes, then turn off the heat. Pour in the lemon juice, serve in bowls, and sprinkle with parsley.
