Red Lentils with Bacon
Ingredients
- Lentils - 2 cups
- Garlic - 6 cloves
- Spanish onions - 2 heads
- Water - 1 qt
- Olive Oil - 2 tablespoons
- Salt - to taste
- Baking Tomatoes - 7 pieces
- Ground Black Pepper - to taste
- Bacon - to taste
Step by Step guide
Step 1
In a heavy-bottomed pot, sauté the finely chopped onion in olive oil.
Step 2
When the onion becomes soft, add the lentils and sauté for 2 minutes.
Step 3
Add water and cook for about 20 minutes.
Step 4
Meanwhile, finely chop the garlic, and peel the tomatoes, then blend them into a chunky puree.
Step 5
Add the garlic and tomato puree to the cooked lentils. Season with salt and pepper to taste. Cook for another 5 minutes after boiling.
Step 6
Drain the cooked lentils in a colander and let the liquid drain.
Step 7
Cut the bacon into small pieces and fry until golden brown.
Step 8
Serve the cooked lentils in deep plates and top with the fried bacon.
