Description
Rancio wines are dark brown wines with a complex, rich, slightly oxidized fruity aroma. These wines are aged in wooden barrels in the sun for a long time. A well-known example is Madeira.
Ingredients
- Olive Oil - 4 tablespoons
- Mullet - 2 lbs
- Onion - 1 head
- Lemon - ½ piece
- Dry Madeira - 6 fl oz
- Breadcrumbs - 2 tablespoons
- Butter - 1.8 oz
- Salt - to taste
Step by Step guide
Step 1
Season the fish with salt inside and out and make slashes on the sides with a sharp knife. Pour oil into a baking dish and sprinkle with finely chopped onion. Place the fish in a single layer, drizzle with lemon juice and wine. Sprinkle breadcrumbs on top and add pieces of butter.
Step 2
Preheat the oven to 356°F. Bake for 15 minutes until the fish is browned. Serve immediately without removing from the dish.
