Red rice with spices, chicken, and green peas

Ingredients

  • Olive Oil - 3 tablespoons
  • Skin-On Chicken Breasts - 24 oz
  • Onion - 1 head
  • Orange Bell Peppers - 3 pieces
  • Garlic - 1 clove
  • Oregano - 1 tablespoon
  • Paprika - 1 tablespoon
  • Cayenne Pepper - ¾ teaspoon
  • Long-Grain Rice - 1½ cups
  • Passata Tomato Sauce - 0.6 cups
  • Chicken Broth - 2 cups
  • Frozen green bean pods - 1½ cups

Step by Step guide

Step 1

Heat the olive oil in a deep skillet over medium heat. Season the chicken with salt and pepper. Add the diced chicken, chopped peppers, finely chopped onion, minced garlic, and oregano to the skillet. Sauté for 5 minutes.

Step 2

Then add the paprika and cayenne pepper. Add the rice and mix well.

Step 3

Next, pour in the broth and tomato sauce. Bring to a boil, cover with a lid, reduce the heat, and simmer until the chicken and rice are tender and the liquid is absorbed, about 25 minutes. Add more broth if necessary.

Step 4

Add the peas to the skillet and cook for about 2 minutes. Season with salt and pepper and serve.
