Red Sauce
Ingredients
- Fat - 2 tablespoons
- Chicken Broth - 1 qt
- Wheat Flour - 2 tablespoons
- Onion - 1 piece
- Carrot - 1 piece
- Celery salt - 1 piece
- Parsley - 1 piece
- Passata Tomato Sauce - 1.8 oz
- Sugar - 1 tablespoon
- Butter - 2 tablespoons
- Salt - to taste
- White Pepper (whole) - to taste
Step by Step guide
Step 1
Heat the fat in a saucepan, add the flour, and sauté it over moderate heat until light brown.
Step 2
Separately sauté the finely chopped onion, carrot, celery, and parsley in the fat.
Step 3
Add the sautéed vegetables to the tomato paste, previously diluted with broth, and sauté everything for another 10 minutes.
Step 4
Gradually pour the hot meat broth into the flour mixture while stirring continuously. Cook the resulting mixture for another 20 minutes, then add the sautéed roots and pepper, and continue cooking, periodically skimming off the fat, for another 10-15 minutes.
Step 5
Strain the resulting sauce, and pass the roots through a sieve.
Step 6
Add sugar, salt, bring to a boil, remove from heat, and stir in the butter.
