Ingredients
- Rhubarb - 10.6 oz
- Arugula - 5.3 oz
- Goat cheese - 4.2 oz
- Roast duck - 4.2 oz
- Sugar - 1.8 oz
- Honey - 1 tablespoon
- Olive Oil - 1 tablespoon
- Balsamic Vinegar - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the rhubarb stalks and cut them into thick shavings.
Step 2
In a saucepan, mix sugar with one tablespoon of water and briefly sauté the rhubarb in this mixture for one minute over high heat. Add honey, stir, and remove from heat.
Step 3
Mix olive oil with balsamic vinegar. Slice the duck breast thinly. On each plate, arrange some arugula, duck breast, goat cheese, and rhubarb. Season with salt and pepper, and drizzle with the olive oil and balsamic vinegar dressing.
