Rhubarb with Shallots and Beef Liver
Ingredients
- Rhubarb - 2 pieces
- Shallot - 2 pieces
- Beef Kidneys - 5.3 oz
- Dry White Wine - 6 tablespoons
- Fresh basil leaves - to taste
Step by Step guide
Step 1
Cut the rhubarb into 1.5 cm cubes. Slice the shallots into half rings.
Step 2
Heat 1 tablespoon of olive oil in a skillet. Add the rhubarb and shallots. Cook for 3 minutes. Pour in 3 tablespoons of white wine. Cook for no more than 5 minutes (otherwise, the rhubarb will turn to mush, and we need it to retain its original shape).
Step 3
Place the pre-prepared beef liver in the heated skillet. Pour in 3 tablespoons of white wine. Add 3 basil leaves. Sauté for 3 minutes on each side.
Step 4
Voilà! Arrange the rhubarb and liver on a plate, garnishing with basil leaves.
