Ingredients

  • Marbled Beef - 17.6 oz
  • Fresh Mushrooms - 5.3 oz
  • Flaky sea salt - 0.2 oz

Step by Step guide

Step 1

Preheat a grill pan (or another heavy-bottomed skillet) until hot.

Step 2

Be sure to pat the piece of meat dry with paper towels so that it sears rather than steams.

Step 3

Brush the steak with olive oil on both sides (if desired).

Step 4

Lightly rub with coarse sea salt (when preparing the steak, forget about regular salt!).

Step 5

Place a piece of meat on a hot skillet and sear for 1 to 1.5 minutes on one side. After that, immediately arrange halved mushrooms around the steak so that they cook alongside it and reach readiness at the same time.

Step 6

Flip the steak to the other side: now, thanks to the crust that has formed, all the juices will stay inside.

Step 7

After another 1 to 1.5 minutes, flip the meat for the third time to achieve a nice crosshatch pattern (from the grill rack).

Step 8

After flipping, reduce the heat to low. We do this so that the steak begins to cook through without burning, and thanks to the ample fat rendered from the ribeye, you are guaranteed a perfect crust.

Step 9

After 3 minutes, flip the steak again for another 3 minutes, then remove it from the skillet. For a steak with a thickness of 2 cm, this will give us a Medium doneness.

Step 10

Let it rest for about a minute.

Step 11

Arrange on a plate, add a sprinkle of freshly ground pepper, sea salt, a sprig of thyme, and a piece of butter, then place the mushrooms on the plate.
