Ingredients
- Thick Beef Rib - 28.2 oz
- Garlic - 4 cloves
- Vegetables - 10.6 oz
- Olive Oil - 1 tablespoon
- Barbecue sauce - 8.8 oz
- Chicken Broth - 5.3 oz
- Red Grape Juice - 3 fl oz
- Rosemary - 1 stalk
- Thyme - 4 stalks
- Salt - to taste
- "Five Pepper Blend" - to taste
Step by Step guide
Step 1
Season the ribs (preferably marbled beef) with salt and pepper, then sear them well in olive oil along with whole garlic cloves, thyme, and rosemary.
Step 2
Mix together the meat broth, barbecue sauce, red wine, sautéed garlic, rosemary, thyme, and roughly chopped vegetables (carrots, leeks, celery root and stalk, and onion) for the marinade.
Step 3
Place the ribs in a cast iron dish, pour the marinade over them, and put them in an oven preheated to 70–176°F (158–176 degrees Fahrenheit) for eleven to twelve hours.
Step 4
Remove the container and let the ribs cool—then carefully extract them so that the meat doesn’t separate from the bones. Strain the broth and reduce it by one third. If necessary, season with salt and pepper. Pour this sauce over the ribs and let them sit for two hours.
Step 5
Then, place the ribs in a skillet and transfer to an oven preheated to 180–374°F for twelve to fifteen minutes. The result should be meat so tender that it can be eaten with a spoon. Serve with a hot sauce.
