Rice and Lentil Salad
Ingredients
- Green Lentils - 1½ cups
- Fresh Lime Juice - 0.3 cups
- Olive Oil - 2 tablespoons
- Minced garlic - 4 teaspoons
- Ground Cumin - 1 teaspoon
- Sugar - ¾ teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
- Brown Rice - 2 cups
- Tomato - 1 piece
- Chopped Cilantro - 0.7 oz
- Red Onion - 2.1 oz
- Avocado - 1 piece
Step by Step guide
Step 1
Place the lentils in a pot and cook them until they are soft, about 20 minutes.
Step 2
Drain the water from the lentils and let them cool. Meanwhile, whisk together in a small bowl the lime juice, oil, garlic, cumin, and sugar, seasoning with salt and pepper to taste.
Step 3
Combine the chopped tomato and the already cooked rice with the lentils. Pour the prepared dressing over everything and serve with avocado.
