Rice Noodle Salad

Ingredients

  • Sweet Potato - 1 piece
  • Orange Bell Peppers - 1 piece
  • Butternut Squash - ½ piece
  • Salt - to taste
  • Vegetable Oil - 2 tablespoons
  • Rice Noodles - 6.2 oz
  • Chili jam - 1 tablespoon
  • Snap Peas - 8 pieces
  • Shimeji mushrooms - 4 pieces
  • Peanut Sprouts - ¼ cup
  • Miso Paste - 3 tablespoons
  • Cilantro - 2 stems

Step by Step guide

Step 1

Cook the noodles in boiling water for 5 minutes.

Step 2

Preheat the oven to 392°F.

Step 3

Place the chopped sweet potato, red pepper, and squash on a baking sheet, drizzle with oil, and sprinkle with salt.

Step 4

Roast until tender for about 20 minutes, then remove and cool.

Step 5

Combine all ingredients except cilantro in a bowl and mix.

Step 6

Divide onto 2 plates and garnish with cilantro.
