Ingredients
- Rice Noodles - 7.9 oz
- Pork tenderloin - 17.6 oz
- Vegetable Oil - 2 spoons
- Garlic - 3 cloves
- Onion - 2 heads
- Curry - 2 spoons
- Orange Bell Peppers - 3 pieces
- Fish Oil - 2 spoons
- Cilantro - 1.8 oz
- Fresh basil leaves - 1.8 oz
Step by Step guide
Step 1
Pour boiling water over the thin dried rice noodles and let them soak for about 7 minutes, until they become soft. Drain the water and transfer the noodles to a large bowl. Reserve half a cup of the water used for soaking the noodles for the filling.
Step 2
Heat 1 tablespoon of oil in a large skillet, add finely chopped garlic, and sauté for 1 minute. Add the pork tenderloin, cut into small pieces, and cook for 3-4 minutes, stirring constantly.
Step 3
Transfer the sautéed pork from the skillet to a bowl. Add the remaining oil to the skillet and sauté the finely chopped onion and sliced bell pepper over medium heat for about 3 minutes.
Step 4
When the vegetables are soft, return the pork to the skillet and sprinkle with curry. Continue stirring and cook the meat for another minute.
Step 5
Pour a quarter cup of the reserved noodle water into the skillet with the meat, stir, and transfer the meat to the bowl with the noodles. Add fish sauce, a bit more noodle water, and chopped cilantro with basil.
