Ingredients
- Rice Noodles - 8.1 oz
- Squid - 15.9 oz
- Lime Juice - 6 tablespoons
- Fish Oil - 1 tablespoon
- Sugar - 2 teaspoons
- Red Long Chili Peppers - ¾ teaspoon
- Shallot - 2 pieces
- Vegetable Oil - 6 tablespoons
- Fresh Mint - to taste
- Courgette - 1 piece
- Basil - to taste
- Cilantro - to taste
- Salt - 1 teaspoon
Step by Step guide
Step 1
Clean the squid, remove the tentacles, and cut into thin rings. Place in boiling salted water and cook, stirring once, for about a minute until it darkens. Drain the squid in a colander and rinse with cold water.
Step 2
Cook the noodles in the same water used for the squid for about three minutes until soft. Transfer the squid to a plate and rinse the noodles with cold water.
Step 3
In a bowl, mix lime juice, fish sauce, sugar, red pepper, and salt. Stir until the sugar dissolves. Then gently pour in the vegetable oil and mix thoroughly again.
Step 4
Slice the cucumber into half-moon wedges and thinly slice the shallots. Then combine the squid rings, noodles, cucumber, shallots, and shredded herbs.
