Rice Salad with Grapes and Curry
Ingredients
- Basmati rice - 1 cup
- Olive Oil - 2 tablespoons
- Red Curry Powder - 1 tablespoon
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Seedless Green Grapes - 7.1 oz
- Lime Juice - ¼ cup
- Chopped Sage Leaves - 1.2 oz
- Roasted Peanuts - 1.9 oz
Step by Step guide
Step 1
Rinse the rice well and drain.
Step 2
In a saucepan, heat 1 tablespoon of olive oil over medium heat, add curry powder, and sauté for 30 seconds. Add the rice, stir, pour in 2.5 cups of water, season with salt and pepper.
Step 3
Bring to a boil, reduce heat, cover, and cook until done, about 1 hour. Remove from heat and let sit covered for 10 minutes.
Step 4
Fluff the rice with a fork and transfer to a bowl. Add lime juice and the remaining olive oil. Season with salt and pepper. Chill for 1 hour.
Step 5
Then fold in the halved grapes, mint, and lightly chopped cashews.
