Rice Salad with Pesto Sauce
Ingredients
- Basil - 0.4 oz
- Garlic - 1 clove
- Pistachios - 1 tablespoon
- Grated Pecorino Pepato Cheese - 0.9 oz
- Olive Oil - 9 tablespoons
- Salt - to taste
- Arborio rice - 8.1 oz
- Chicken Broth - 15 fl oz
- Ground Black Pepper - to taste
- Meyer Lemon Juice - 1 fl oz
- Scallions - 4 pieces
Step by Step guide
Step 1
In a blender, combine basil, garlic, pine nuts, olive oil, and a little salt. Transfer to a bowl and mix with grated Parmesan.
Step 2
Measure the required amount of rice and combine it with a quarter of the prepared pesto.
Step 3
Place in a skillet and pour in hot broth. Put on the heat and add a little salt. Stir and, when the rice comes to a boil, cover and cook on low heat for 20 minutes.
Step 4
Transfer to a serving dish, drizzle with lemon juice, olive oil, and the remaining pesto. Garnish with basil leaves, chopped green onions, and Parmesan.
