Ingredients

  • Basil - 1 bunch
  • Boiled White Round Rice - 3.5 oz
  • Mint - 1 bunch
  • Butter - 1 tablespoon
  • Red Curry Powder - ¼ teaspoon
  • Ground Black Pepper - a pinch
  • Salt - a pinch
  • Olive Oil - 2 tablespoons
  • Meyer Lemon Juice - 1 tablespoon
  • Mustard Greens - 1 teaspoon
  • Walnuts - 1 tablespoon
  • Suluguni Cheese - 2.5 oz
  • Thyme - 2 sprigs

Step by Step guide

Step 1

Cook the rice according to the package instructions.

Step 2

Heat the butter in a pan, add the rice and curry, and stir.

Step 3

Break the walnuts by hand into large pieces and add them to the rice.

Step 4

Tear the basil and mint leaves by hand (set aside a few mint leaves for garnish).

Step 5

Add the basil, mint, and thyme leaves to the rice, season with salt and pepper.

Step 6

Prepare the dressing: gradually pour the olive oil into the mustard while stirring continuously, then add the lemon juice. Drizzle the warm salad with the mustard dressing and mix.

Step 7

Crumble the cheese by hand and sprinkle it over the salad.

Step 8

Garnish with the remaining mint leaves and serve.
