Rice with Rabbit
Ingredients
- Olive Oil - 6 fl oz
- Onion - 1 piece
- Garlic - 1 clove
- Potato - 1 piece
- Parsley - 1 stem
- Rabbit - 14.1 oz
- Artichoke bottoms - 2 pieces
- Cinnamon - ¼ teaspoon
- Paprika - ¼ teaspoon
- Long-Grain Rice - 17.6 oz
- Salt - to taste
Step by Step guide
Step 1
Finely chop the onion, garlic, tomato, and parsley. Cut the artichokes into 4 pieces. Dice the rabbit meat.
Step 2
Heat the olive oil in a large ovenproof pot with thick walls and bottom. Add the onion, garlic, tomato, and parsley and cook on low heat, stirring, for 10 minutes. Add the rabbit and artichokes. Sprinkle with cinnamon and paprika, cover with a lid, and cook for another 10 minutes until the meat is no longer red.
Step 3
Pour in 1 liter of water, add a pinch of salt, and bring to a boil. Add the rice, cover, and cook for another 15-20 minutes until the rice is tender and the liquid is absorbed. Serve immediately, right in the same pot.
