Rice with Spicy Sausage and Mushrooms

Ingredients

  • Oyster Mushrooms - 1 teaspoon
  • Dried Chinese mushrooms - 5 pieces
  • Oyster Mushrooms - 4 pieces
  • Poultry - 12.3 oz
  • Cervelat Sausage - 5.3 oz
  • Minced garlic - 4 cloves
  • Grated Ginger Root - 2 pieces
  • Corn Starch - 2 teaspoons
  • Vegetable Oil - 1 tablespoon
  • Apple Wine - 2 teaspoons
  • Soy Sauce - 3 teaspoons
  • Sugar - 1 teaspoon
  • Long-Grain Rice - 1 cup
  • Water - 1¼ cups
  • Scallions - 2 pieces
  • Sesame Oil - 2 teaspoons
  • Fish Oil - 2 teaspoons

Step by Step guide

Step 1

Rinse the mushrooms under cold running water. Place the mushrooms in a large bowl and cover with water. Soak in water for about 1 hour. Once the mushrooms are softened, drain the water and rinse again under cold running water. Squeeze out excess moisture, dry with a paper towel, slice into thin strips, and set aside.

Step 2

In a medium bowl, combine the sliced mushrooms, sausage, minced garlic and ginger, cornstarch, oil, fish sauce, rice wine, soy sauce, oyster sauce, and sugar. Mix well. Set aside and let it sit at room temperature for at least 30 minutes or refrigerate overnight.

Step 3

When everything is ready, wash the rice and drain thoroughly. In an enameled cast iron pot, pour in 1 cup of water and soak the rice in the water for 30 minutes.

Step 4

After 30 minutes, transfer the rice to the cast iron pot. Over medium heat, cover and bring the water and rice to a boil. When the water starts boiling, add the chicken and sausages. Carefully spread them evenly over the rice. Cover the pot, reduce the heat. Cook for 30 minutes.

Step 5

While the rice is cooking, prepare the sauce. In a small bowl, mix together sesame oil, oyster sauce, soy sauce, sugar, water, and fish sauce.

Step 6

After 30 minutes, open the lid and check if the sausages and chicken are cooked. If not, cover the pot and cook for another 10 minutes.

Step 7

Place the pot with the cooked rice on the table. Sprinkle with chopped green onion and add half of the sauce. Stir the rice with the chicken and sausages and serve hot.
