- Squid - 14.1 oz
- Olive Oil - 9 fl oz
- Fish Oil - 1 qt
- Garlic - 2 cloves
- Tomatoes - 3 pieces
- Rice - 17.6 oz
- Salt - to taste
Step by Step guide
Step 1
Place the ink sacs in a bowl of water. Using a sharp knife, cut the squid into rings. Chop the garlic and tomatoes.
Step 2
Heat the oil in a fireproof ceramic dish or a deep skillet with a thick bottom. Add the squid rings and tentacles, if you like them, and cook over medium heat, stirring, for 5 minutes. Add the garlic, tomatoes, and 150 ml of broth. Reduce the heat, cover, and cook for 20 minutes.
Step 3
Meanwhile, carefully remove the ink sacs from the bowl and transfer them to a measuring jug. Add broth to make it 1.2 liters.
Step 4
Add the rice to the skillet and immediately add the ink sacs with the broth. Salt, mix well, cover, and cook over high heat for 10 minutes, then reduce the heat to medium, add strips of pepper, cover, and cook for another 10 minutes. Remove the skillet from the heat and let it sit covered for 5 minutes before serving.
