Rice with Vegetables and Mung Beans Indian Style

Ingredients

  • Mung Beans - 3.5 oz
  • Water - 17 fl oz
  • Turmeric - a pinch
  • Vegetable Oil - 2½ tablespoons
  • Cumin Seeds - ½ teaspoon
  • Minced garlic - 3 cloves
  • Onion - ½ head
  • Frozen Green Peas - 2 tablespoons
  • Grated Ginger - 1½ tablespoons
  • Green Chili Pepper - 2 pieces
  • Rice - 2.6 oz
  • Canned tomatoes - 2 pieces
  • Lemon Juice - 1 tablespoon

Step by Step guide

Step 1

Rinse the mung beans, place them in a pot with water, add turmeric, and bring to a boil.

Step 2

Boil for 25 minutes until the mung beans are soft and the liquid has evaporated.

Step 3

Remove from heat and set aside.

Step 4

Heat the oil in a deep skillet and add the cumin seeds.

Step 5

When they start to crackle, add the garlic and onion, and sauté until golden brown.

Step 6

Add the frozen peas, ginger, and green chili, and sauté for 2 minutes.

Step 7

Add the mung beans and 1 teaspoon of salt, then add the rice and mix well.

Step 8

Heat the tomatoes on low heat for 3-4 minutes.

Step 9

Drizzle with lemon juice.
