- Ricotta cheese - 17.6 oz
- Cherries in Liqueur - 4 fl oz
- Gelatin - 0.4 oz
- Whole egg - 10 pieces
- Powdered Sugar - 7.1 oz
- 10% cream - 8 fl oz
- Water - 40 fl oz
- Sugar - 19.4 oz
- Ground Coffee - 7.1 oz
- Gingerbread-flavored syrup - 3 fl oz
- Starch film - 0.5 oz
- Savoiardi Cookies - 0.7 oz
Step by Step guide
Step 1
Prepare the cream: bring the liqueur to a boil, then add the gelatin; mix everything together.
Step 2
Pass the ricotta through a sieve. Whisk until smooth and well combined.
Step 3
Then beat the egg yolks and powdered sugar until they form a white foam, and add this mixture to the prepared ricotta and liqueur. Also, fold in the whipped cream.
Step 4
Prepare a sugar syrup and mix it with the coffee.
Step 5
Take 20 grams of the resulting syrup and soak the ladyfinger biscuits (20 grams) in it.
Step 6
Then remove it and shape it into a log. In the mold, layer the cream, then the soaked biscuits, and top it with cream.
Step 7
Prepare the cherry sauce: Add sugar and water to the cherries, place it on the stove, and bring to a boil. Skim off any foam, then add cornstarch that has been soaked in liqueur. Bring to a boil again.
Step 8
Garnish with cocoa and cherry sauce.
