Roast duck is traditionally considered a festive dish. There are many recipes for preparing this wonderful meat: with apples, buckwheat, cabbage, berries, mushrooms, and more. One thing is clear: roasting a duck in the oven is a true art. The most important aspect is the skin—its flavor, color, and texture—so it's crucial to pay special attention to it. In this recipe, for example, you need to baste the duck every 10 minutes, but the result is well worth the effort.

Ingredients

  • Duck - 1 piece
  • Salt - to taste
  • Oranges - 1 piece
  • Balsamic Vinegar - 2 fl oz
  • Honey - 2.8 oz

Step by Step guide

Rinse the duck inside and out with cold water, then pat it dry with paper towels.

Make shallow cuts in the skin of the chicken breast in a diamond pattern, being careful not to cut into the meat.

Pierce the remaining fatty parts of the duck with the tip of a knife to help release the fat, being careful not to pierce the meat. There is no need to poke the skin on the legs, as it is quite thin there.

Generously season the duck with salt, both inside and out. Cross the duck's legs and tie them with kitchen twine. Tuck the wings behind the back.

Place the duck breast-side up on a rack with a baking tray underneath — this will allow the rendered fat to drip into the tray, preventing the duck from sitting in it. Put the duck in the oven preheated to 356°F for 30 minutes.

Flip the duck breast-side down and roast for another 30 minutes.

Mix freshly squeezed orange juice with balsamic vinegar.

Turn the duck breast side up again, and you can drain the rendered fat from the roasting pan and save it for future use.

Brush the duck with the balsamic mixture using a pastry brush, paying special attention to the breast with the scored skin. Return the duck to the oven for another 30 minutes, basting it every 10 minutes.

Mix the remaining balsamic mixture with honey, brush this mixture over the duck, and roast for an additional 30 minutes, basting the duck every 10 minutes. If desired, at the end of the cooking time, you can increase the temperature and set the grill mode for 5-10 minutes to further brown the duck.
