Ingredients
- Olive Oil - 3½ tablespoons
- Garlic - 3 cloves
- Black Cumin (Cumin) - 5 stalks
- Veal Tenderloin - 1¼ kg
- Brown Sugar - 1 tablespoon
- Spanish onions - 3 heads
- Horseradish Leaves - 2.6 oz
- Cream - 4 fl oz
- Meyer Lemon Juice - 1 tablespoon
- Spices - to taste
Step by Step guide
Step 1
Mix 2 tablespoons of olive oil, 2 cloves of garlic, cumin, and spices. Rub the mixture onto the meat.
Step 2
Preheat the oven to 356°F. Transfer the meat to a baking dish and roast for about 40 minutes or until done. Remove the meat and cover with foil, letting it rest for a while.
Step 3
Heat the remaining oil in a pan over medium heat. Slice the onion into thin rings and add to the pan. Cook for 2-3 minutes until slightly soft. Reduce the heat and sauté the onion for 15 minutes, stirring constantly, until it begins to caramelize. Add the sugar and cook for another 5 minutes.
Step 4
In a bowl, combine horseradish, cream, 1 clove of garlic, and lemon juice. Mix well, season with spices, and chill.
Step 5
Slice the meat into pieces, arrange on plates, and drizzle with the cream and top with the onions. Garnish with sprigs of cumin. Serve with potatoes.
