Roasted Beef with Lemon-Herb Crust and Vegetables
Ingredients
- Chopped Sage Leaves - ½ cup
- Olive Oil - 2 tablespoons
- Garlic - 5 cloves
- Ground Black Pepper - ½ teaspoon
- Citrus Zest Mix - 2 teaspoons
- New Potatoes - 15.9 oz
- Onion - 4 heads
- Carrot - 15.9 oz
- Courgette - 2 pieces
- Beef - 3 lbs
Step by Step guide
Step 1
Preheat the oven to 320°F. In a large bowl, mix the parsley, half of the olive oil, minced garlic, lemon zest, and black pepper. Transfer half of the mixture to another bowl. Add the remaining oil to the large bowl and mix well. Add the chopped vegetables and mix thoroughly.
Step 2
Rub the remaining mixture onto the meat and place it on a baking sheet. Arrange the vegetables around the meat, except for the zucchini, and roast for 1 hour 45 minutes for medium doneness. Remove from the oven and cover the meat with foil. Let it rest for 15-20 minutes.
Step 3
Meanwhile, increase the temperature to 428°F. Add the zucchini to the meat and vegetables and return to the oven for 15-20 minutes.
Step 4
Slice the meat into thin pieces and season with salt. Serve with the roasted vegetables.
