Ingredients
- Yellow Beets - 4 pieces
- Goat cheese - 3.5 oz
- Mixed salad greens - 4 cups
- Olive Oil - 2 fl oz
- Spanish onions - 1 head
- Dried Rosemary - 1 tablespoon
- White Balsamic Cream - 2 fl oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a bowl, mix olive oil, vinegar, oregano, salt, and pepper.
Step 2
Preheat the oven to 374°F. Place the beets in a heatproof dish and drizzle with half of the olive oil. Cover with foil and bake for about 1.5 hours until tender. Cool and peel. Cut into small cubes.
Step 3
On plates, arrange the salad greens, top with the beets and thinly sliced onion. Drizzle with the dressing and sprinkle with goat cheese.
