Roasted Chicken with Fennel and Apples
Ingredients
- Poultry - 3 lbs
- Fennel - 2 pieces
- Shallot - 4 pieces
- Chopped Sage Leaves - ½ cup
- Olive Oil - 3 tablespoons
- Apple Cider Vinegar - 2 tablespoons
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Pickled Apples - 2 pieces
Step by Step guide
Step 1
Preheat the oven to 446°F.
Step 2
Cut the chicken into 8 pieces. Chop the fennel into small pieces. Halve the shallots lengthwise. Peel the apples and cut them into quarters.
Step 3
Arrange the chicken and vegetables on 2 baking sheets and sprinkle with sage.
Step 4
In a small bowl, mix the oil and vinegar and drizzle over the chicken and vegetables. Toss, season with salt and pepper.
Step 5
Roast for 35 minutes, stirring occasionally. Then add the apples and return to the oven for another 15–20 minutes.
