Description
A great dressing for green salads and a sauce for vegetables.
Ingredients
- Garlic - 1 head
- Olive Oil - 2 fl oz
- Lime - 1 piece
- Red Wine Vinegar - 1 fl oz
- Grated Ginger Root - 0 fl oz
- Sesame Oil - 0 fl oz
- Soy Sauce - 0 fl oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
You will need 1 large head of garlic or 2 small ones. Remove the outer skin, leaving it only on the cloves, but do not damage the integrity of the head. Cut off the top of the head, slightly trimming the tops of the cloves. Place on a sheet of foil and drizzle with 15 ml of olive oil. Wrap it up and place it in the oven for 40 minutes to 1 hour, until the garlic is very soft. Unwrap and let it cool slightly.
Step 3
In a blender, squeeze the flesh from the garlic cloves and add the remaining olive oil, juice of 1 lime, vinegar, ginger, sesame oil, soy sauce, and a bit of black pepper. Blend well.
