Roasted Goat "Katsiki"
Ingredients
- Kid goat - 8 lbs
- Salt - 1.1 oz
- Ground Black Pepper - 0.4 oz
- Olive Oil - 10 fl oz
- Dry White Wine - 5 fl oz
- Meyer Lemon Juice - 5 fl oz
- Thyme - 0.3 oz
- Garlic - 2.1 oz
- Oregano - 0.2 oz
Step by Step guide
Step 1
Rinse the meat, dry it, and cut it into large pieces (4 cm).
Step 2
Marinade: olive oil, white wine, fresh lemon juice, spices, salt, pepper, oregano, thyme, garlic (crushed). Leave in the refrigerator for a day.
Step 3
Place the meat in a baking dish, add a little water to the juice, cover with parchment paper and tightly with foil, and roast for 2.5 hours at 180°C. Before the meat is almost done (check with a skewer or fork), remove the parchment and foil and leave in the oven until golden brown.
Step 4
Serve drizzled with the juice.
