Ingredients
- Kid - 21.2 oz
- Fat - 1.8 oz
- Onion - 2 heads
- Adjika - 1 tablespoon
- Wheat Flour - 14.1 oz
- Chicken Egg - 2 pieces
- Herb Bouquet - 1 tablespoon
- Dill - 2 sprigs
- Parsley - 2 sprigs
- Cilantro - 2 sprigs
- Salt - to taste
Step by Step guide
Step 1
Cut the kid meat into pieces, sprinkle and rub with salt, mix with chopped onion and herb mix.
Step 2
Heat the fat in a skillet, sauté the meat with onion over low heat.
Step 3
Mix flour, eggs, a pinch of salt, and water into a firm dough, gradually adding water to avoid a too-watery dough. Leave the dough in the refrigerator for 20–30 minutes to allow the flour to hydrate.
Step 4
Roll out the dough into a thin layer, cut into squares, and boil in salted water.
Step 5
Place the garnish on a plate, top with the roast, and sprinkle with chopped herbs.
