Ingredients
- Lamb Neck Fillet - 4 lbs
- Onion - 3 pieces
- Carrot - 2 pieces
- Chicken Broth - 17 fl oz
- Espresso - 4 fl oz
- Heavy cream - 5 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat a cast-iron skillet, add vegetable oil, and sear the lamb leg on all sides, seasoning it with salt and pepper.
Step 2
Set the meat aside, and in the same pan, sauté the roughly chopped carrots and onions.
Step 3
Pour the broth over the vegetables and return the leg. Place in an oven preheated to 356°F for one hour.
Step 4
After an hour, pour coffee and cream over the lamb leg and continue roasting for another hour.
Step 5
Remove the meat from the oven and place it on paper towels. Transfer the meat juices to a saucepan and reduce until thickened, then strain and serve alongside the lamb and vegetables.
