Roasted Leg of Lamb
Ingredients
- Garlic - 4 cloves
- Lamb Neck Fillet - 3 lbs
- Rosemary - 2.3 bunches
- Olive Oil - 3 tablespoons
- Red Grape Juice - 10 fl oz
- Honey - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 428°F. Make small incisions all over the leg of lamb. Insert a slice of garlic, previously cut into thin pieces, and a few rosemary leaves into each cut. Then generously season with salt and pepper, drizzle the leg of lamb with olive oil, and roast for 1 hour.
Step 2
While the meat is roasting, mix the wine and honey in a saucepan, heating while stirring. Bring to a boil, then reduce the heat and simmer until the volume of the mixture is reduced by half. Brush the lamb with the glaze and return it to the oven for another 30-45 minutes.
Step 3
Once the lamb is cooked, cover it with foil and place it in a warm spot for 10-15 minutes. Slice and serve with roasted vegetables (fennel, bell peppers, red onions, potatoes), and/or fresh vegetables.
