Roasted Leg of Lamb in White Wine
Ingredients
- Fresh Rose Hips - 2 stems
- Garlic - 3 cloves
- Pancetta - 2.6 oz
- Boneless Lamb Leg - 4 lbs
- Onion - 1 head
- Olive Oil - 4 fl oz
- Dry White Wine - 12 fl oz
Step by Step guide
Step 1
Preheat the oven to 446°F.
Step 2
Place the rosemary leaves, chopped garlic, and minced pancetta in a bowl. Mash into a paste and season with spices.
Step 3
Using a sharp knife, make shallow cuts in the meat and stuff with the rosemary mixture. Spread the remaining mixture on top.
Step 4
Slice the onion into rings and place on a baking tray. Lay the leg of lamb on top and drizzle with olive oil. Roast for 15 minutes. Reduce the temperature to 356°F and pour in 250 ml of wine. Roast for 1.5 hours or a bit longer. Add a little water as needed. Transfer the leg to a plate and let it rest for 10 minutes.
Step 5
Remove the onion and excess fat. Pour the remaining wine into the baking tray and place it at the top of the oven for 3-4 minutes until the sauce thickens. Season with spices.
Step 6
Slice the meat and drizzle with the sauce.
