Description
This sauce pairs well with pasta and meat, and can also be served as a dip with homemade chips. It can be stored in the refrigerator for about a week.
Ingredients
- Cilantro - 1 bunch
- Orange Bell Peppers - 4 pieces
- Garlic - 1 clove
- Chopped almonds - 1.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Mild Chili Spice - to taste
- Paprika - 1 teaspoon
- Clarified Butter - 2 tablespoons
Step by Step guide
Step 1
First, wash the peppers and roast them in the oven for an hour until the skin blackens. Then peel the peppers and remove the seeds.
Step 2
While the peppers are roasting, melt the clarified butter and add a teaspoon of ground paprika.
Step 3
Lightly toast the almonds in a dry skillet until golden brown. Grind them into crumbs in a blender.
Step 4
Add the roasted peppers, cilantro, a bit of finely chopped chili pepper (you can remove the seeds for less heat), and pour in the oil with paprika. Season with salt and pepper to taste, and squeeze in the garlic clove. Blend everything together for a couple of minutes.
