Roasted Pork Belly
Ingredients
- Salted pork belly - 2 lbs
- Garlic - 1 head
- Ground Black Pepper - 2 teaspoons
- Paprika - 1 teaspoon
- Cayenne Pepper - 1 teaspoon
- Salt - 4 teaspoons
- Parsley - to taste
Step by Step guide
Step 1
Cut the pork belly into two pieces, sprinkle with salt on the meat and skin sides, stack the pieces in a bowl one on top of the other, meat side to meat side, and refrigerate for 3 days.
Step 2
Peel and chop the garlic, chop the parsley.
Step 3
Mix the garlic, parsley, and all dry ingredients.
Step 4
Thickly coat the pork belly with the mixture on the meat side, stack the pieces one on top of the other again, and tie tightly with kitchen twine.
Step 5
Wrap first in parchment paper, then in foil. Bake in foil for 90 minutes at 302°F, then remove the foil and parchment and roast at 374°F for another 30 minutes.
Step 6
Cool down.
