Roasted Pork Knuckle with Fried Potatoes and Stewed Sauerkraut
Ingredients
- Smoked pork knuckle - 3 lbs
- Light Beer - 17 fl oz
- Fresh Rose Hips - 4 pieces
- Thyme - 0.5 oz
- Green peppercorns - 1 tablespoon
- Spices - 1 tablespoon
- Bay leaf - 3 pieces
- Honey - 5.3 oz
- Water - 2 qt
- Salt - to taste
Step by Step guide
Step 1
Place the pork knuckle in a pot, cover with water and beer, add all the other ingredients (except for the honey), and boil for 2.5 hours (until tender).
Step 2
15 minutes before it is done, add the honey to the broth and remove from heat.
Step 3
Then transfer the knuckle to a baking tray and roast in the oven at 180-392°F for 20-30 minutes until a golden brown crust forms.
Step 4
Serve the finished knuckle with stewed sauerkraut and fried potatoes.
Step 5
You can also add pickles, hot peppers, and herbs as a side dish. Serve the knuckle with spicy red sauce, mustard, and horseradish.
