Roasted Pork Leg with Apples and Potatoes

Ingredients

  • Pork Neck - 6 lbs
  • Olive Oil - ¼ cup
  • Ocean salt - 1 tablespoon
  • Salad Potatoes - 6 pieces
  • Fresh Rose Hips - 1 tablespoon
  • Green onion tops - 6 pieces
  • Apple - 4 pieces
  • Brandy - 1 tablespoon
  • Wheat Flour - 2 tablespoons
  • Chicken Broth - 1¾ cups

Step by Step guide

Step 1

Preheat the oven to 482°F. Place the leg in a baking dish and rub with 2 tablespoons of olive oil. Rub with sea salt and roast for 20 minutes.

Step 2

In a large bowl, mix the chopped potatoes, remaining oil, rosemary, and chopped green onions.

Step 3

Reduce the temperature to 356°F. Roast the pork for another 40 minutes. Baste with the juices from the dish and arrange the potatoes around it. Roast for another hour.

Step 4

Cut the apples into quarters, remove the cores, and place them next to the meat. Baste with the juices and roast for 30-40 minutes until the meat is cooked through.

Step 5

Transfer the meat to a plate, cover with foil, and let it rest for 15 minutes.

Step 6

Meanwhile, spread the vegetables and fruits evenly in the dish. Increase the temperature to 428°F and roast for another 10 minutes until golden brown. Serve on a platter.

Step 7

In a saucepan, pour in 2 tablespoons of fat from the dish and place over medium heat. Add the brandy and stir. Then whisk in the flour and cook for 1 minute. Remove from heat and add the broth. Stir, return to heat, and cook until the sauce thickens slightly.

Step 8

Serve the meat with apples, vegetables, and sauce.
