Ingredients
- Pork tenderloin - 5 lbs
- Coarse Salt - 1.1 oz
- Ground Black Pepper - ¾ cup
- Nigella Seeds - 1 tablespoon
- Olive Oil - 2 tablespoons
- Spices - 1.1 oz
- Juniper Berries - 0.3 cup
- Water - 1 cup
- Fresh Rose Hips - 1 piece
Step by Step guide
Step 1
Preheat the oven to 248°F. Rub the meat with 1 teaspoon of salt, 1 teaspoon of pepper, 1 tablespoon of fennel seeds, and 1 tablespoon of chopped rosemary. Heat the olive oil in a large skillet over medium heat and place the meat in it. Sear until golden brown on all sides for about 12 minutes. Transfer to a baking sheet and let cool for 20 minutes.
Step 2
Mix the remaining salt, pepper, spices, and juniper berries in the skillet. Stir and add water. Divide the mixture into 3 parts and transfer one part to a plate. Spread the remaining mixture to the size of the piece of meat and place the pork on top. Distribute the remaining mixture around the sides.
Step 3
Bake the meat until cooked through for about 2.5 hours.
Step 4
Place the skillet with the meat on the countertop and let the meat rest for 10-20 minutes. Remove the salt from around the meat. Transfer the meat to a cutting board and remove any remaining salt. Place on a serving dish and slice.
