Roasted Pork Tenderloin with Fennel and Garlic
Ingredients
- Garlic - 12 cloves
- Fennel - 3 lbs
- Olive Oil - 3 tablespoons
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Dried Rosemary - 0.5 teaspoon
- Pork tenderloin - 2 lbs
Step by Step guide
Step 1
Preheat the oven to 482°F.
Step 2
Place the peeled garlic cloves and the fennel cut into 8 wedges on a baking sheet. Drizzle with 2 tablespoons of oil, season with salt and pepper. Toss well and place in the oven for 10 minutes.
Step 3
Rub the meat with the remaining oil and season with oregano, salt, and pepper.
Step 4
Remove the baking sheet from the oven, push the vegetables to the edges, place the meat in the center, and return to the oven for 20–25 minutes until the meat is cooked through.
Step 5
Transfer the meat to a cutting board, let it rest for about 5 minutes, then slice. Serve with fennel and garlic.
