- Pumpkin - 17.6 oz
- Feta cheese - 3.5 oz
- Chopped Cilantro (Coriander) - ½ bunch
- Ginger - 1 teaspoon
- Balsamic sauce - to taste
- Salt - to taste
- Pine nuts - to taste
- Herbs de Provence - to taste
Step by Step guide
Step 1
Cut the pumpkin into small pieces, drizzle with olive oil, sprinkle with a mixture of herbs de Provence (or oregano), and roast for 30 minutes at 356°F.
Step 2
Cut the feta cheese into 1 cm cubes, peel and grate 1 cm of ginger. Chop the cilantro.
Step 3
Toast the pine nuts in a pan. Alternatively, you can use 80 g of black olives, halved.
Step 4
Combine the pumpkin with feta, ginger, and cilantro, season with salt to taste, sprinkle with nuts, and drizzle with balsamic sauce.
