Roasted Tomato Salad

Ingredients

  • Tomatoes - 12 pieces
  • Basil - to taste
  • Garlic - 2 cloves
  • Olive Oil - 4 tablespoons
  • Olives stuffed with lemon - 24 pieces
  • Salt - to taste
  • Balsamic Vinegar - 2 tablespoons
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Cut each tomato in half and place them cut side up on a baking sheet. Season with salt and pepper. Evenly sprinkle with garlic and drizzle with olive oil. Top each with a basil leaf (the leaves should be coated with oil on both sides).

Step 2

Bake on the top rack of the oven for about 1 hour at 392°F (392 degrees Fahrenheit). Let cool.

Step 3

Before serving, transfer the tomatoes to a plate, garnish with basil, and drizzle with oil mixed with vinegar. The final touch is an olive on each tomato. Serve with crispy bread.
