Roasted Tomato Vinaigrette
Ingredients
- Yellow Cherry Tomatoes - 12.3 oz
- Minced garlic - 1 tablespoon
- Olive Oil - 1 tablespoon
- Tagine Spice Mix - 1 teaspoon
- Coarse Salt - 1 teaspoon
- Ground Black Pepper - to taste
- Champagne Vinegar - 2 tablespoons
Step by Step guide
Step 1
Preheat the oven to 302°F. Grease a baking sheet with vegetable oil.
Step 2
Cut the tomatoes in half lengthwise and scoop out the seeds. Transfer to a bowl and add olive oil, garlic, spice blend, salt, and pepper. Mix well and spread in a single layer on the baking sheet. Roast for about 1 hour and 20 minutes, until the tomatoes are very soft and collapse, and the released juices thicken to a syrupy consistency.
Step 3
Transfer the tomatoes to a blender and add the vinegar, blending until smooth. Chill.
