Roasted Vegetable Salad with Basil

Ingredients

  • Olive Oil - ¼ cup
  • Minced garlic - 1 clove
  • Zucchini - 2 pieces
  • Squash - 2 pieces
  • Tomatoes - 2 pieces
  • Corn on the cob - 1 piece
  • White Onion - 1 head
  • Basil - 1.2 oz
  • Eggplants - 2 pieces

Step by Step guide

Step 1

To prepare the roasted vegetable salad with basil, preheat the oven to medium heat. Mix the oil and garlic in a large bowl.

Step 2

Place the vegetables on a baking sheet. Lightly coat with the garlic oil; sprinkle with salt and pepper.

Step 3

Roast the vegetables, turning frequently, until they are slightly charred and tender (about 10 minutes). Choose larger eggplants for this dish and cut them lengthwise.

Step 4

Transfer the vegetables to a cutting board.

Step 5

Remove the corn kernels from the cob. Dice the remaining vegetables.

Step 6

Toss all the vegetables and basil in the bowl with the garlic oil.

Step 7

Season with salt and pepper. Serve immediately.
